Sweet, Tender Sugarcone Cabbage Is the Star of This Autumn Salad

NBC News ·

Toasty walnuts, crisp apples, sharp cheddar, fresh herbs and tender cabbage make this salad perfect for any fall meal.

Chef notes

Most cabbage has to be cooked or shredded before it's good. Sugarcone was bred to be sweet and tender enough to eat raw. This salad has the flavors of fall and is great for the holidays.

Technique tips: Sugarcone cabbage is very tender so we are treating it almost like lettuce. Slice it thin and dress it right before serving so it stays crisp. Cut the apples last and toss them with a squeeze of the dressing immediately so they don't brown. Make sure to toast the walnuts; raw walnuts are a little bitter, toasted ones taste much better!
